Perfectionist and creative, he firmly believes in teamwork which he refers to in the following terms: "My journey consists in building a team around me, creating forms of collaboration and projects imbued with passion and respect for a cuisine of great class, attentive to achieving the right balance between pleasure and innovation".

Under the guidance of chef Igor Macchia, Chiara Patracchini has managed to follow her innate vocation for patisserie. Her desserts mingle sweet and savoury sensations but well-balanced flavours always leave space for a touch of elegance and an element of surprise.

Her style? "To be a winner, a recipe must contain four elements I believe to be essential: texture, crispness, creaminess and acidity".

He loves well-constructed and geometrically perfect dishes, techniques and textures that are never banal. And as he works alongside Igor Macchia intent on creating increasingly complex, amazing and, above all, delicious menus, he dreams of revisiting … "my grandfather's recipe for pane cotto…"

Closely identified with La Credenza all along the way, he has dedicated more than twenty years to food, research and promotion.

Today Giovanni Grasso looks after the guests in the dining room, explaining the menu, making suggestions and listening, in order to interpret their desires. "When you come to dine at La Credenza, it is important to enjoy an all-round experience made up of flavours, aromas and pleasure. We believe luxury lies in simple things and a spirit of conviviality. We want to reach out to people's hearts with our cuisine and our dishes".

Franca Pulcini

Franca Pulcini

Turin-born and bred, she first explored the meanders of wine as a simple enthusiast but soon turned into a great connoisseur and professional sommelier.

Her passion for wine is overwhelming and, like the true "piemontese" she is, has a special place in her heart for Nebbiolo, Barbaresco and Barolo. She also loves the wines from South Tyrol, Sicily, Slovenia, as well as Champagnes and Pinot noir from Burgundy, the white wines from Alsace and Moselle and, last but not least, Spanish reds.

Apart from the origin and type of wine, she has a high consideration for vintage bottles which, in her opinion, are "truly amazing".
